- 1 small onion, diced

- 4 cups potatoes, peeled and diced
- 4 cups chicken or beef broth

- 2 cups shredded cheddar cheese

- 1/2 tsp black pepper
- 1/2 tsp paprika
- 2 tbsp butter
- 2 tbsp all-purpose flour

- Make it creamy: In a small saucepan, melt butter. Whisk in flour and cook 1 minute. Slowly whisk in milk until smooth and thickened.
- Combine: Stir milk mixture into the soup. Add shredded cheese and stir until melted and creamy.
- Serve: Taste and adjust seasoning. Serve hot.
Notes
For extra richness, use half-and-half instead of milk. Top with bacon bits, green onions, or extra cheese for an even cozier bowl.
