Ingredients

  • 2 carrots, sliced
  • 2 celery stalks, chopped

  • 2 garlic cloves, minced
  • 1 can (14.5 oz) diced tomatoes
  • 6 cups vegetable or chicken broth
  • 1 tsp dried thyme
  • Salt and black pepper, to taste
  • 1 tbsp olive oil

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onion and garlic and sauté for 2–3 minutes until fragrant.
  2. Add carrots, celery, and cabbage. Cook for 5–7 minutes, stirring occasionally.
  3. Add diced tomatoes and broth. Season with thyme, salt, and pepper.
  4. Bring to a boil, then reduce heat and simmer for 25–30 minutes until vegetables are tender.
  5. Serve hot and enjoy this easy, comforting soup.

Notes
