- 2 lbs boneless, skinless chicken thighs or breasts
- 1/2 cup soy sauce (low sodium preferred)
- 1/3 cup brown sugar or honey
- 1/4 cup rice vinegar or apple cider vinegar
- 2 tbsp sesame oil
- 3 cloves garlic, minced
- 1 tbsp fresh ginger, grated
- 1 tbsp cornstarch (optional, for thickening)
- 2 tbsp water (if thickening)
- Optional: sesame seeds and green onions for garnish

- Place chicken in the crockpot.
- Add soy sauce, brown sugar (or honey), vinegar, sesame oil, garlic, and ginger.
- Cover and cook on LOW for 5–6 hours or HIGH for 3–4 hours.
- Remove chicken and shred or slice.
- Whisk cornstarch with water and stir into sauce if thickening is desired.
- Return chicken to crockpot and cook 10 more minutes until sauce thickens.
- Garnish with sesame seeds and green onions before serving.
Notes
Serve over rice, quinoa, or noodles. Add broccoli or bell peppers during the last 30 minutes for a complete meal.
