- 1 lb (450g) boneless, skinless chicken breasts or thighs
- 1 cup long-grain rice, rinsed
- 1 3/4 cups chicken broth
- 1 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp dried oregano
- 1/2 tsp paprika
- Salt and black pepper, to taste
- 1 cup diced cucumber
- 1/2 cup plain Greek yogurt
- 1 tbsp lemon juice
- 1 tbsp fresh dill, chopped (or 1 tsp dried)
- 1 clove garlic, minced (for tzatziki)

- Preheat oven: Preheat oven to 375°F (190°C).
- Prepare chicken: Place chicken in a greased 9×13-inch baking dish. Drizzle with olive oil and season with garlic powder, oregano, paprika, salt, and pepper.
- Add rice: Spread rinsed rice evenly around chicken in the baking dish.
- Add broth: Pour chicken broth over rice and chicken, covering evenly.
- Bake: Cover with foil and bake 35–40 minutes, until rice is tender and chicken is cooked through. Remove foil for the last 5–10 minutes to lightly brown chicken.
- Make tzatziki: While baking, combine Greek yogurt, diced cucumber, minced garlic, lemon juice, and dill in a small bowl. Stir to combine.
- Serve: Remove chicken from oven, spoon rice onto plates, place chicken on top, and drizzle or serve with tzatziki sauce.
Notes
For extra flavor, add diced bell peppers or cherry tomatoes to the rice before baking. You can also marinate the chicken in a bit of olive oil, lemon juice, and spices for 30 minutes before baking. Leftovers store well in the fridge for up to 2 days; reheat gently.
