  • 1 1/2 lb boneless, skinless chicken breasts or thighs
  • 1 cup uncooked long-grain rice
  • 1 1/2 cups chicken broth
  • 1 cup cherry tomatoes, halved
  • 1/2 cup diced cucumber
  • 1/2 cup red onion, diced
  • 1/2 cup tzatziki sauce (store-bought or homemade)
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1/2 tsp dried oregano
  • Salt and pepper, to taste
  • Optional garnish: fresh parsley or dill

  1. Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish.
  2. In the baking dish, combine rice, chicken broth, cherry tomatoes, cucumber, red onion, garlic powder, paprika, oregano, salt, and pepper.
  3. Place chicken pieces on top of the rice mixture and drizzle with olive oil.
  4. Cover tightly with foil and bake 35–40 minutes, until chicken is cooked through (165°F / 74°C) and rice is tender.
  5. Remove foil, spoon tzatziki sauce over the chicken and rice, then bake an additional 5 minutes to warm the sauce.
  6. Garnish with parsley or dill if desired and serve warm.

Notes

You can swap chicken for turkey or use pre-cooked rotisserie chicken for a faster version. Add olives or roasted red peppers for extra Mediterranean flavor.
