- 1 1/2 lb boneless, skinless chicken breasts or thighs
- 1 cup uncooked long-grain rice
- 1 1/2 cups chicken broth
- 1 cup cherry tomatoes, halved
- 1/2 cup diced cucumber
- 1/2 cup red onion, diced
- 1/2 cup tzatziki sauce (store-bought or homemade)
- 2 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp paprika
- 1/2 tsp dried oregano
- Salt and pepper, to taste
- Optional garnish: fresh parsley or dill

- Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish.
- In the baking dish, combine rice, chicken broth, cherry tomatoes, cucumber, red onion, garlic powder, paprika, oregano, salt, and pepper.
- Place chicken pieces on top of the rice mixture and drizzle with olive oil.
- Cover tightly with foil and bake 35–40 minutes, until chicken is cooked through (165°F / 74°C) and rice is tender.
- Remove foil, spoon tzatziki sauce over the chicken and rice, then bake an additional 5 minutes to warm the sauce.
- Garnish with parsley or dill if desired and serve warm.
Notes
You can swap chicken for turkey or use pre-cooked rotisserie chicken for a faster version. Add olives or roasted red peppers for extra Mediterranean flavor.
