  • 4 boneless, skinless chicken breasts
  • 1 cup long-grain white rice
  • 1 1/2 cups chicken broth
  • 1/2 cup diced onions
  • 1/2 cup diced bell peppers
  • 2 cloves garlic, minced
  • 1 tsp dried oregano
  • 1/2 tsp paprika
  • Salt and black pepper, to taste
  • 1 cup Greek yogurt
  • 1/2 cucumber, grated and drained
  • 1 tbsp lemon juice
  • 1 clove garlic, minced (for tzatziki)
  • 2 tbsp fresh dill, chopped

  1. Preheat oven to 375°F (190°C).
  2. In a 9×13-inch baking dish, combine rice, chicken broth, diced onions, bell peppers, minced garlic, oregano, paprika, salt, and pepper.
  3. Place chicken breasts on top of the rice mixture and cover tightly with foil.
  4. Bake for 35–40 minutes, until chicken is cooked through and rice is tender.
  5. Meanwhile, prepare the tzatziki sauce: In a bowl, combine Greek yogurt, grated cucumber, lemon juice, minced garlic, dill, salt, and pepper. Mix well.
  6. Serve chicken and rice with a generous dollop of tzatziki sauce on top.

Notes

For extra flavor, marinate chicken in half of the tzatziki sauce for 30 minutes before baking. Garnish with fresh dill and lemon wedges.
