- 1 1/2 lb boneless, skinless chicken breasts or thighs
- 1 cup long-grain white rice, uncooked
- 2 cups chicken broth
- 1 cup tzatziki sauce (store-bought or homemade)
- 1 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp dried oregano
- Salt and black pepper, to taste
- Optional garnish: chopped cucumber, tomato, parsley, or feta cheese

- Preheat oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.
- Add uncooked rice to the baking dish and spread evenly.
- Pour in chicken broth and olive oil. Stir to combine.
- Season chicken with garlic powder, oregano, salt, and pepper, then place on top of the rice.
- Spread tzatziki sauce evenly over the chicken.
- Cover tightly with foil and bake for 45–50 minutes, until rice is tender and chicken is fully cooked (165°F / 74°C).
- Remove foil and bake an additional 5–10 minutes if needed.
- Fluff rice, garnish as desired, and serve warm.
Notes
For extra flavor, add lemon zest or juice before serving. Brown rice can be used but will require additional liquid and baking time. Serve with a Greek salad or warm pita bread.
