- 1 packet taco seasoning
- 1/2 cup water
- 1 large head romaine lettuce, chopped
- 2 cups Doritos chips, crushed (Nacho Cheese flavor)
- 1 cup cherry tomatoes, halved
- 1 cup shredded cheddar cheese
- 1/2 cup red onion, diced
- 1 cup canned corn, drained
- 1 cup black beans, rinsed and drained
- 1/2 cup sour cream
- 1/2 cup salsa
- 1/2 cup Catalina or French dressing
- Fresh cilantro for garnish (optional)

- Cook the beef: Brown ground beef in a skillet over medium heat. Drain excess grease.
- Add taco seasoning and water. Simmer for 3–5 minutes until well combined. Let cool slightly.
- Prepare the salad: In a large bowl, combine chopped lettuce, tomatoes, corn, black beans, red onion, and cheddar cheese.
- Add the seasoned beef and toss gently.
- Add dressing: Mix in sour cream, salsa, and Catalina dressing until evenly coated.
- Right before serving, add crushed Doritos and toss lightly to keep them crunchy.
- Garnish with cilantro if desired and serve immediately.
Notes
Add Doritos just before serving so they stay crisp. For a lighter version, use lean ground turkey and Greek yogurt instead of sour cream. Extra toppings like avocado, jalapeños, or olives make great additions.
