  • 1 tsp baking powder

  • 1/2 cup unsalted butter, softened
  • 1 cup brown sugar
  • 3 large eggs
  • 1/4 cup molasses
  • 1/2 cup orange juice
  • 1 1/2 cups mixed dried fruits (raisins, currants, cherries, apricots)
  • 1/2 cup chopped nuts (walnuts, pecans, or almonds)
  • Optional: 2 tbsp brandy or rum for soaking

Instructions

  1. Preheat oven to 325Β°F (165Β°C). Grease and line a 9×5-inch loaf pan.
  2. In a bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  3. In a separate bowl, cream butter and brown sugar until light and fluffy. Add eggs one at a time, mixing well.
  4. Mix in molasses and orange juice until combined.
  5. Gradually add dry ingredients to wet ingredients. Fold in dried fruits and nuts.
  6. Pour batter into prepared pan and smooth the top.
  7. Bake for 60–70 minutes, or until a toothpick inserted in the center comes out clean.
  8. Cool in pan for 10 minutes, then transfer to a wire rack to cool completely.
  9. Optional: Brush with brandy or rum for extra flavor and moistness.
