- 2 cups all-purpose flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 1/2 cup unsalted butter, softened
- 1 cup brown sugar
- 3 large eggs
- 1/4 cup molasses
- 1/2 cup orange juice
- 1 1/2 cups mixed dried fruits (raisins, currants, cherries, apricots)
- 1/2 cup chopped nuts (walnuts, pecans, or almonds)
- Optional: 2 tbsp brandy or rum for soaking
Instructions
- Preheat oven to 325Β°F (165Β°C). Grease and line a 9×5-inch loaf pan.
- In a bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
- In a separate bowl, cream butter and brown sugar until light and fluffy. Add eggs one at a time, mixing well.
- Mix in molasses and orange juice until combined.
- Gradually add dry ingredients to wet ingredients. Fold in dried fruits and nuts.
- Pour batter into prepared pan and smooth the top.
- Bake for 60β70 minutes, or until a toothpick inserted in the center comes out clean.
- Cool in pan for 10 minutes, then transfer to a wire rack to cool completely.
- Optional: Brush with brandy or rum for extra flavor and moistness.
