- 4 boneless, skinless chicken breasts
- 1/2 cup all-purpose flour
- 2 large eggs, beaten
- 1 cup breadcrumbs
- 1/2 cup grated Parmesan cheese
- 2 tbsp chopped fresh basil
- Salt and black pepper to taste
- 3 tbsp olive oil or unsalted butter for frying
- Lemon wedges for serving (optional)

- Place chicken breasts between two sheets of plastic wrap and gently pound to about 1/2 inch thickness.
- Prepare a dredging station: flour in one bowl, beaten eggs in a second, and a mixture of breadcrumbs, Parmesan, basil, salt, and pepper in a third.
- Coat each chicken breast in flour, dip in eggs, then press into breadcrumb mixture to fully coat.
- Heat olive oil or butter in a large skillet over medium heat.
- Cook chicken cutlets 3–4 minutes per side until golden brown and cooked through (internal temperature 165°F / 74°C).
- Transfer to a paper towel-lined plate to drain excess oil.
- Serve hot with lemon wedges and your favorite side.
Notes
For extra crispiness, use panko breadcrumbs. Chicken can be prepared ahead of time and refrigerated before frying. Swap basil with parsley or oregano for a different herb flavor.
