- 2 tbsp olive oil or butter
- 1 medium onion, diced
- 3 cloves garlic, minced
- 1 large head of cauliflower, cut into florets
- 4 cups vegetable broth (or chicken broth)
- 1 cup milk or cream (optional for extra creaminess)
- 1/2 tsp ground nutmeg
- Salt and black pepper, to taste
- 2 tbsp fresh parsley, chopped (for garnish)
- Shredded cheese (optional topping)
Instructions
- Heat olive oil or butter in a large pot over medium heat. Add onion and sauté until softened, about 5 minutes.
- Stir in garlic and cook for another 1–2 minutes until fragrant.
- Add cauliflower florets and vegetable broth. Bring to a boil, then reduce heat and simmer for 20 minutes until cauliflower is tender.
- Remove from heat and blend the soup with an immersion blender (or in batches with a regular blender) until smooth and creamy.
- Stir in milk or cream if using, then season with nutmeg, salt, and black pepper.
- Ladle into bowls, garnish with parsley and cheese if desired, and serve warm.
Notes
For a vegan version, use vegetable broth and swap the cream for coconut milk or cashew cream. You can also add roasted cauliflower on top for extra texture and flavor.
