  • 2 lbs boneless, skinless chicken breasts
  • 1 can (14 oz) coconut milk
  • 3 cups chicken broth
  • 1 red bell pepper, sliced
  • 1 cup mushrooms, sliced
  • 1 small onion, sliced
  • 3 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 2 tbsp red curry paste
  • 2 tbsp soy sauce or fish sauce
  • 1 tbsp brown sugar or honey
  • 1 tbsp lime juice
  • Salt to taste
  • Optional garnish: cilantro, green onions, lime wedges

  1. Place chicken in the crockpot.
  2. Add bell pepper, mushrooms, onion, garlic, and ginger.
  3. In a bowl, whisk coconut milk, chicken broth, curry paste, soy sauce, and sugar.
  4. Pour mixture over the ingredients.
  5. Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours.
  6. Remove chicken, shred it, and return to soup.
  7. Stir in lime juice.
  8. Serve hot with fresh herbs and lime wedges.

Notes

Add rice noodles or jasmine rice during the last 20 minutes for a heartier soup. Adjust curry paste to control spice level.
