- 2 lbs boneless, skinless chicken breasts
- 1 can (14 oz) coconut milk
- 3 cups chicken broth
- 1 red bell pepper, sliced
- 1 cup mushrooms, sliced
- 1 small onion, sliced
- 3 cloves garlic, minced
- 1 tbsp fresh ginger, grated
- 2 tbsp red curry paste
- 2 tbsp soy sauce or fish sauce
- 1 tbsp brown sugar or honey
- 1 tbsp lime juice
- Salt to taste
- Optional garnish: cilantro, green onions, lime wedges

- Place chicken in the crockpot.
- Add bell pepper, mushrooms, onion, garlic, and ginger.
- In a bowl, whisk coconut milk, chicken broth, curry paste, soy sauce, and sugar.
- Pour mixture over the ingredients.
- Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours.
- Remove chicken, shred it, and return to soup.
- Stir in lime juice.
- Serve hot with fresh herbs and lime wedges.
Notes
Add rice noodles or jasmine rice during the last 20 minutes for a heartier soup. Adjust curry paste to control spice level.
