This Crockpot Cheeseburger Soup is rich, creamy, and packed with ground beef, potatoes, and gooey cheddar cheese. A hearty slow cooker dinner that tastes just like a cheeseburger in a bowl.

- 1 lb ground beef
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 4 medium potatoes, peeled and diced
- 2 carrots, diced
- 3 cups beef broth
- 2 cups shredded cheddar cheese
- 1 cup milk or half-and-half
- 1/2 cup sour cream
- 1 tbsp Worcestershire sauce
- 1 tsp Dijon mustard
- Salt and black pepper to taste
- Optional: chopped green onions, bacon bits, or extra cheese for garnish
Instructions
- In a skillet, cook ground beef with onion and garlic until browned. Drain excess fat and transfer to the crockpot.
- Add diced potatoes, carrots, and beef broth. Stir well to combine.
- Cook on low for 6–7 hours or high for 3–4 hours, until potatoes are tender.
- Stir in cheddar cheese, milk, sour cream, Worcestershire sauce, and Dijon mustard until creamy.
- Season with salt and black pepper to taste.
- Serve hot with your favorite toppings such as bacon bits or green onions.
Notes
For a lighter version, swap ground beef with lean ground turkey and use reduced-fat cheese. This soup is a family favorite and reheats well for leftovers.
