Description

This Crockpot Cheeseburger Soup is rich, creamy, and packed with ground beef, potatoes, and gooey cheddar cheese. A hearty slow cooker dinner that tastes just like a cheeseburger in a bowl.


Ingredients

  • 1 lb ground beef
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 medium potatoes, peeled and diced
  • 2 carrots, diced
  • 3 cups beef broth
  • 2 cups shredded cheddar cheese
  • 1 cup milk or half-and-half
  • 1/2 cup sour cream
  • 1 tbsp Worcestershire sauce
  • 1 tsp Dijon mustard
  • Salt and black pepper to taste
  • Optional: chopped green onions, bacon bits, or extra cheese for garnish

Instructions

  1. In a skillet, cook ground beef with onion and garlic until browned. Drain excess fat and transfer to the crockpot.
  2. Add diced potatoes, carrots, and beef broth. Stir well to combine.
  3. Cook on low for 6–7 hours or high for 3–4 hours, until potatoes are tender.
  4. Stir in cheddar cheese, milk, sour cream, Worcestershire sauce, and Dijon mustard until creamy.
  5. Season with salt and black pepper to taste.
  6. Serve hot with your favorite toppings such as bacon bits or green onions.

Notes

For a lighter version, swap ground beef with lean ground turkey and use reduced-fat cheese. This soup is a family favorite and reheats well for leftovers.
