Description

  • 1 1/2 lbs boneless, skinless chicken breasts or thighs
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 3 cups chicken broth
  • 2 cans (10.5 oz each) cream of chicken soup
  • 1 cup milk
  • 1 cup frozen peas and carrots
  • 1/2 tsp salt (or to taste)
  • 1/4 tsp black pepper
  • 1 tsp dried thyme
  • 1 can refrigerated biscuit dough, cut into pieces

Instructions

  1. Place chicken, onion, garlic, chicken broth, cream of chicken soup, milk, salt, pepper, and thyme into the crock pot. Stir to combine.
  2. Cover and cook on low for 6–7 hours or high for 3–4 hours.
  3. Remove chicken, shred with forks, and return to the crock pot.
  4. Stir in frozen peas and carrots.
  5. Add biscuit dough pieces on top of the mixture.
  6. Cover and cook on high for an additional 1–2 hours until dumplings are cooked through.
  7. Stir gently before serving and enjoy warm.

Notes

For extra richness, add a splash of heavy cream at the end. You can also use homemade dumplings instead of biscuit dough if preferred.
