- 1 1/2 lbs boneless, skinless chicken breasts or thighs
- 1 small onion, diced
- 3 cloves garlic, minced
- 3 cups chicken broth
- 2 cans (10.5 oz each) cream of chicken soup
- 1 cup milk
- 1 cup frozen peas and carrots
- 1/2 tsp salt (or to taste)
- 1/4 tsp black pepper
- 1 tsp dried thyme
- 1 can refrigerated biscuit dough, cut into pieces

- Place chicken, onion, garlic, chicken broth, cream of chicken soup, milk, salt, pepper, and thyme into the crock pot. Stir to combine.
- Cover and cook on low for 6–7 hours or high for 3–4 hours.
- Remove chicken, shred with forks, and return to the crock pot.
- Stir in frozen peas and carrots.
- Add biscuit dough pieces on top of the mixture.
- Cover and cook on high for an additional 1–2 hours until dumplings are cooked through.
- Stir gently before serving and enjoy warm.
Notes
For extra richness, add a splash of heavy cream at the end. You can also use homemade dumplings instead of biscuit dough if preferred.
