  • For the Custard Filling:
  • 1/2 cup heavy cream
  • 1/2 cup whole milk
  • 2 egg yolks
  • 1/4 cup granulated sugar
  • 1 tsp vanilla bean paste or extract
  • For the Brûlée Topping:
  • 1/4 cup granulated sugar (for caramelizing)

Instructions

  1. Make the Custard: In a saucepan, whisk together milk, cream, yolks, sugar, and vanilla. Heat over medium-low, stirring constantly, until thickened (about 8–10 minutes). Cool and refrigerate.
  2. Make the Cookies: Preheat oven to 350°F (175°C). Cream butter and sugar until light and fluffy. Beat in egg and vanilla. Add flour, baking powder, and salt. Mix to form dough.
  3. Scoop dough onto baking sheets. Make an indent in the center of each with your thumb or spoon. Bake 10–12 minutes, until edges are lightly golden. Cool completely.
  4. Assemble: Fill each cookie center with chilled custard. Sprinkle the tops with sugar and torch until caramelized.
  5. Let topping set and crack into that golden brûlée shell before serving!

Notes

Don’t have a kitchen torch? Use your broiler to caramelize the sugar topping (watch closely). Store cookies chilled and brûlée just before serving for best texture.
