- For the Cookies:
- 1/2 cup (1 stick) unsalted butter, softened
- 3/4 cup granulated sugar
- 1 large egg
- 1 tsp vanilla extract
- 1 1/2 cups all-purpose flour
- 1/2 tsp baking powder
- 1/4 tsp salt
- For the Custard Filling:
- 1/2 cup heavy cream
- 1/2 cup whole milk
- 2 egg yolks
- 1/4 cup granulated sugar
- 1 tsp vanilla bean paste or extract
- For the Brûlée Topping:
- 1/4 cup granulated sugar (for caramelizing)
Instructions
- Make the Custard: In a saucepan, whisk together milk, cream, yolks, sugar, and vanilla. Heat over medium-low, stirring constantly, until thickened (about 8–10 minutes). Cool and refrigerate.
- Make the Cookies: Preheat oven to 350°F (175°C). Cream butter and sugar until light and fluffy. Beat in egg and vanilla. Add flour, baking powder, and salt. Mix to form dough.
- Scoop dough onto baking sheets. Make an indent in the center of each with your thumb or spoon. Bake 10–12 minutes, until edges are lightly golden. Cool completely.
- Assemble: Fill each cookie center with chilled custard. Sprinkle the tops with sugar and torch until caramelized.
- Let topping set and crack into that golden brûlée shell before serving!
Notes
Don’t have a kitchen torch? Use your broiler to caramelize the sugar topping (watch closely). Store cookies chilled and brûlée just before serving for best texture.
