- 1 lb ground beef (or ground turkey)
- 1 small onion, diced
- 3 cloves garlic, minced
- 1 packet taco seasoning
- 1 can (15 oz) diced tomatoes
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) corn, drained
- 1 can (10 oz) Rotel (tomatoes with green chilies)
- 3 cups chicken broth
- 1 block (8 oz) cream cheese, softened
- 1 cup heavy cream (or half & half)
- 1 1/2 cups shredded cheddar cheese
- Salt and pepper to taste
- Optional toppings: tortilla chips, avocado, sour cream, cilantro
Instructions
- In a large pot, brown the ground beef with onion until fully cooked. Drain excess grease.
- Add garlic and taco seasoning, stirring to coat the meat.
- Mix in diced tomatoes, Rotel, beans, corn, and chicken broth. Bring to a simmer.
- Reduce heat to low and stir in cream cheese until melted and smooth.
- Pour in heavy cream and add shredded cheddar cheese. Stir until creamy and blended.
- Taste and adjust seasoning with salt and pepper as needed.
- Serve hot with your favorite toppings.
Notes
This soup thickens as it cools, making it even heartier. For a lighter version, use Greek yogurt instead of cream cheese and swap heavy cream with milk.
