- 2 boneless, skinless chicken breasts, sliced
- 2 tbsp olive oil (or oil from sun-dried tomatoes)
- 3 cloves garlic, minced
- 1 cup sun-dried tomatoes, drained and chopped
- 2 cups heavy cream
- 1 cup chicken broth
- 1 1/2 cups grated Parmesan cheese
- 12 oz pasta (penne, fettuccine, or your choice)
- 1/2 tsp salt (or to taste)
- 1/4 tsp black pepper
- 1/2 tsp Italian seasoning
- Optional: fresh spinach or basil

- Cook pasta according to package directions. Drain and set aside.
- Heat oil in a large skillet over medium heat. Season and cook chicken until golden and cooked through. Remove and set aside.
- In the same skillet, sauté garlic and sun-dried tomatoes for 1–2 minutes.
- Pour in chicken broth and heavy cream, stirring to combine.
- Add Parmesan cheese and stir until melted and sauce is smooth.
- Return chicken to the skillet and simmer for a few minutes.
- Add cooked pasta and toss until well coated.
- Stir in spinach or basil if using and cook until wilted.
- Serve warm with extra Parmesan if desired.
Notes
For extra depth of flavor, use the oil from the sun-dried tomato jar. You can substitute half-and-half for a lighter sauce or add red pepper flakes for a little heat.
