  • 1 medium onion, diced
  • 3 garlic cloves, minced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 zucchini, diced
  • 1 cup broccoli florets
  • 1 cup cauliflower florets
  • 1/2 cup frozen peas
  • 6 cups vegetable broth
  • 1 cup orzo pasta
  • 1/2 cup heavy cream or coconut cream
  • 1 tsp dried thyme
  • 1 tsp dried parsley
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onion, garlic, carrots, and celery. Sauté until softened.
  2. Add zucchini, broccoli, cauliflower, and peas. Stir to combine.
  3. Pour in vegetable broth and season with thyme, parsley, salt, and pepper. Bring to a boil.
  4. Add orzo pasta and simmer for 8–10 minutes until pasta and vegetables are tender.
  5. Stir in heavy cream or coconut cream and heat through for 2–3 minutes.
  6. Serve hot, garnished with fresh parsley.

Notes

For a vegan option, use coconut cream or cashew cream instead of heavy cream. You can add spinach or kale at the end for extra nutrients.
