- 2 tbsp olive oil
- 1 medium onion, diced
- 3 garlic cloves, minced
- 2 carrots, diced
- 2 celery stalks, diced
- 1 zucchini, diced
- 1 cup broccoli florets
- 1 cup cauliflower florets
- 1/2 cup frozen peas
- 6 cups vegetable broth
- 1 cup orzo pasta
- 1/2 cup heavy cream or coconut cream
- 1 tsp dried thyme
- 1 tsp dried parsley
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Heat olive oil in a large pot over medium heat. Add onion, garlic, carrots, and celery. Sauté until softened.
- Add zucchini, broccoli, cauliflower, and peas. Stir to combine.
- Pour in vegetable broth and season with thyme, parsley, salt, and pepper. Bring to a boil.
- Add orzo pasta and simmer for 8–10 minutes until pasta and vegetables are tender.
- Stir in heavy cream or coconut cream and heat through for 2–3 minutes.
- Serve hot, garnished with fresh parsley.
Notes
For a vegan option, use coconut cream or cashew cream instead of heavy cream. You can add spinach or kale at the end for extra nutrients.
