- 1 medium onion, diced

- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) kidney beans, drained and rinsed
- 1 can (15 oz) corn, drained
- 1 can (14.5 oz) diced tomatoes
- 4 cups chicken or beef broth
- 1 tsp chili powder
- 1 tsp cumin
- 1/2 tsp smoked paprika
- Salt and black pepper, to taste
- 1 cup heavy cream or half-and-half
- 1 cup shredded cheddar cheese (optional)
- Fresh cilantro or green onions, for garnish

- Cook meat: In a large pot, brown ground beef over medium heat until fully cooked. Drain excess fat.
- Sauté aromatics: Add diced onion and cook 3–4 minutes until softened. Add garlic and cook 30 seconds until fragrant.
- Add beans, corn, and tomatoes: Stir in black beans, kidney beans, corn, diced tomatoes, and broth. Season with chili powder, cumin, smoked paprika, salt, and pepper.
- Bring to a simmer and cook 15–20 minutes to allow flavors to meld.
- Add cream: Stir in heavy cream and simmer another 5 minutes until creamy.
- Optional: Stir in shredded cheddar cheese until melted.
- Serve hot, garnished with fresh cilantro or green onions.
Notes
This soup stores well in the fridge for 3 days. For a spicier version, add a dash of cayenne pepper or hot sauce.
