  • 12 oz smoked sausage, sliced
  • 12 oz penne or rotini pasta
  • 1 tbsp olive oil
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 small onion, sliced
  • 3 cloves garlic, minced
  • 1 1/2 tbsp Cajun seasoning
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Optional: parsley or green onions for garnish

  1. Cook pasta according to package directions. Drain and set aside.
  2. Heat olive oil in a large skillet over medium heat.
  3. Add sausage slices and brown on both sides. Remove and set aside.
  4. In the same skillet, sauté peppers, onion, and garlic until softened.
  5. Stir in Cajun seasoning, chicken broth, and heavy cream.
  6. Simmer 3–4 minutes until slightly thickened.
  7. Add Parmesan cheese and stir until smooth.
  8. Return sausage to skillet and toss with sauce.
  9. Add pasta and mix until fully coated.

Notes

Use andouille sausage for authentic Cajun flavor. Add shrimp or chicken for variety.
