- 12 oz smoked sausage, sliced
- 12 oz penne or rotini pasta
- 1 tbsp olive oil
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 small onion, sliced
- 3 cloves garlic, minced
- 1 1/2 tbsp Cajun seasoning
- 1 cup heavy cream
- 1/2 cup chicken broth
- 1/2 cup grated Parmesan cheese
- Salt and pepper to taste
- Optional: parsley or green onions for garnish

- Cook pasta according to package directions. Drain and set aside.
- Heat olive oil in a large skillet over medium heat.
- Add sausage slices and brown on both sides. Remove and set aside.
- In the same skillet, sauté peppers, onion, and garlic until softened.
- Stir in Cajun seasoning, chicken broth, and heavy cream.
- Simmer 3–4 minutes until slightly thickened.
- Add Parmesan cheese and stir until smooth.
- Return sausage to skillet and toss with sauce.
- Add pasta and mix until fully coated.
Notes
Use andouille sausage for authentic Cajun flavor. Add shrimp or chicken for variety.
