- 1/2 tsp ground nutmeg
- 1/2 cup heavy cream or coconut milk
- 2 tbsp fresh parsley, chopped

Instructions
- Heat olive oil or butter in a large pot over medium heat. Sauté onion and garlic until soft and fragrant.
- Add cubed butternut squash, broth, salt, pepper, and nutmeg. Bring to a boil.

- Blend the soup until smooth using an immersion blender or in batches with a countertop blender.
