Description

  • 1 jalapeño, seeded and minced
  • 1/4 cup red onion, finely diced
  • 1 avocado, diced
  • 1/4 cup fresh cilantro, chopped

  • 1/4 cup olive oil
  • 3 tbsp lime juice
  • 1 tbsp red wine vinegar
  • 1 tsp chili powder
  • 1/2 tsp garlic powder
  • Salt and black pepper to taste

  1. Prepare vegetables: Dice tomatoes, bell pepper, jalapeño, red onion, and avocado.
  2. Combine ingredients: In a large bowl, mix black beans, black-eyed peas, corn, tomatoes, bell pepper, jalapeño, onion, cilantro, and avocado.
  3. Make dressing: In a small bowl, whisk together olive oil, lime juice, red wine vinegar, chili powder, garlic powder, salt, and pepper.
  4. Toss: Pour dressing over the mixture and stir gently until evenly coated.

Notes
