- 1/4 cup red onion, finely diced
- 1 avocado, diced
- 1/4 cup fresh cilantro, chopped

- 1/4 cup olive oil
- 3 tbsp lime juice
- 1 tbsp red wine vinegar
- 1 tsp chili powder
- 1/2 tsp garlic powder
- Salt and black pepper to taste

- Make dressing: In a small bowl, whisk together olive oil, lime juice, red wine vinegar, chili powder, garlic powder, salt, and pepper.

Notes
For extra heat, leave some jalapeño seeds in the mix. Add diced mango or pineapple for a sweet and spicy variation. Best served fresh or within 24 hours.
