  • 3/4 cup brown sugar

  • 1 large egg yolk
  • 1/2 cup pumpkin puree
  • 1 tsp vanilla extract
  • 1 cup all-purpose flour
  • 1/2 tsp baking powder
  • 1/4 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp pumpkin pie spice
  • 1/2 tsp cinnamon
  • 1/2 cup white chocolate chips (plus extra for topping)

Instructions

  1. Preheat oven: Preheat to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper.
  2. Mix wet ingredients: In a bowl, whisk together melted butter, brown sugar, and granulated sugar. Stir in egg yolk, pumpkin puree, and vanilla.
  3. Combine dry ingredients: In another bowl, whisk flour, baking powder, baking soda, salt, pumpkin pie spice, and cinnamon.
  4. Combine and fold: Add dry mixture into the wet and stir until just combined. Fold in white chocolate chips.
  5. Bake: Spread batter into pan. Top with extra white chocolate chips. Bake for 25–30 minutes until edges are set and center is slightly soft.
  6. Cool completely: Let blondies cool in pan, then slice and enjoy!

Notes

For extra coolness, chill the blondies for 30 minutes before serving. You can also swirl in cream cheese for a cheesecake-like twist!
