These Cool Pumpkin Blondies are soft, chewy, and packed with warm spices and pumpkin flavor—finished with a swirl of white chocolate for an extra cool twist. A fall dessert that’s as easy as it is irresistible!

- 1/2 cup unsalted butter, melted
- 3/4 cup brown sugar
- 1/4 cup granulated sugar
- 1 large egg yolk
- 1/2 cup pumpkin puree
- 1 tsp vanilla extract
- 1 cup all-purpose flour
- 1/2 tsp baking powder
- 1/4 tsp baking soda
- 1/2 tsp salt
- 1 tsp pumpkin pie spice
- 1/2 tsp cinnamon
- 1/2 cup white chocolate chips (plus extra for topping)
Instructions
- Preheat oven: Preheat to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper.
- Mix wet ingredients: In a bowl, whisk together melted butter, brown sugar, and granulated sugar. Stir in egg yolk, pumpkin puree, and vanilla.
- Combine dry ingredients: In another bowl, whisk flour, baking powder, baking soda, salt, pumpkin pie spice, and cinnamon.
- Combine and fold: Add dry mixture into the wet and stir until just combined. Fold in white chocolate chips.
- Bake: Spread batter into pan. Top with extra white chocolate chips. Bake for 25–30 minutes until edges are set and center is slightly soft.
- Cool completely: Let blondies cool in pan, then slice and enjoy!
Notes
For extra coolness, chill the blondies for 30 minutes before serving. You can also swirl in cream cheese for a cheesecake-like twist!
