- 2 cloves garlic, minced

- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp ground ginger or fresh grated ginger
- Optional: chopped cilantro or green onions for garnish

- Add chicken and sear on both sides until lightly browned (optional, for extra flavor).
- Add rice, coconut milk, chicken broth, salt, pepper, and ginger. Stir to combine.
- Bring to a gentle simmer, cover, and cook for 18–20 minutes until rice is tender and chicken is fully cooked (internal temp 165°F / 74°C).
- Remove from heat and let rest 5 minutes. Fluff rice and stir gently.
- Garnish with chopped cilantro or green onions if desired and serve warm.

For added flavor, squeeze a bit of fresh lime juice over the dish before serving. You can also add vegetables like peas, bell peppers, or spinach to make it more colorful and nutritious.
