  • 1 cup long-grain rice, uncooked
  • 1 can (13.5 oz) coconut milk
  • 1 cup chicken broth
  • 2 cloves garlic, minced
  • 1 small onion, diced
  • 1 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp ground ginger or fresh grated ginger
  • Optional: chopped cilantro or green onions for garnish

  1. Heat olive oil in a large skillet or sauté pan over medium heat. Add onion and garlic, cooking 2–3 minutes until fragrant.
  2. Add chicken and sear on both sides until lightly browned (optional, for extra flavor).
  3. Add rice, coconut milk, chicken broth, salt, pepper, and ginger. Stir to combine.
  4. Bring to a gentle simmer, cover, and cook for 18–20 minutes until rice is tender and chicken is fully cooked (internal temp 165°F / 74°C).
  5. Remove from heat and let rest 5 minutes. Fluff rice and stir gently.
  6. Garnish with chopped cilantro or green onions if desired and serve warm.

Notes

For added flavor, squeeze a bit of fresh lime juice over the dish before serving. You can also add vegetables like peas, bell peppers, or spinach to make it more colorful and nutritious.
