- 1 cup jasmine or basmati rice
- 1 can (13.5 oz) coconut milk
- 1 cup chicken broth
- 2 cloves garlic, minced

- 1 small onion, diced
- 1 tbsp olive oil
- 1/2 tsp turmeric
- 1/2 tsp paprika
- Salt and black pepper, to taste
- Optional: chopped cilantro and lime wedges for garnish

- Sauté aromatics: Heat olive oil in a large skillet or pot over medium heat. Add onion, garlic, and ginger and cook for 2–3 minutes until fragrant.
- Cook the chicken: Add chicken pieces and cook until lightly browned on all sides.
- Add rice and spices: Stir in the rice, turmeric, paprika, salt, and pepper.
- Add liquids: Pour in coconut milk and chicken broth. Stir well to combine.
- Simmer: Bring to a gentle simmer, cover, and cook for 15–18 minutes until rice is tender and chicken is cooked through.
- Rest: Remove from heat and let sit covered for 5 minutes.
- Serve: Fluff the rice and garnish with fresh cilantro and lime wedges before serving.
Notes
For extra vegetables, add peas, bell peppers, or spinach during the last few minutes of cooking. A pinch of chili flakes can add a pleasant spicy kick.
