- 1 small onion, diced
- 2 cloves garlic, minced
- 1 packet taco seasoning
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) kidney beans, drained and rinsed
- 1 can (15 oz) corn, drained
- 1 can (10 oz) Rotel (tomatoes with green chilies)
- 1 can (15 oz) diced tomatoes
- 3 cups beef broth (or chicken broth)
- Optional toppings: shredded cheese, sour cream, avocado, tortilla chips, cilantro
Instructions
- In a large pot, brown the ground beef with onion until fully cooked. Drain excess fat.
- Add garlic and taco seasoning, cooking for 1 minute to release flavors.
- Stir in beans, corn, Rotel, diced tomatoes, and broth.
- Bring to a boil, then reduce heat and simmer for 25–30 minutes.
- Taste and adjust seasoning as needed.
- Serve hot with your favorite toppings like cheese, sour cream, or tortilla chips.
