- 1 lb boneless, skinless chicken breasts or thighs
- 1 tbsp olive oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 bell pepper, chopped
- 1 can (14.5 oz) diced tomatoes
- 4 cups chicken broth
- 1 tsp chili powder
- 1 tsp ground cumin
- 1/2 tsp paprika
- Salt and pepper, to taste
- 1 cup corn kernels (fresh, frozen, or canned)
- 1 can (15 oz) black beans, drained and rinsed
- Juice of 1 lime
- Optional garnishes: tortilla strips, shredded cheese, chopped cilantro, sour cream, avocado slices

- In a large pot, heat olive oil over medium heat. Sauté onions, garlic, and bell pepper until softened, about 5 minutes.
- Add chili powder, cumin, paprika, salt, and pepper, stirring for 30 seconds until fragrant.
- Add chicken, diced tomatoes, and chicken broth. Bring to a boil, then reduce heat and simmer 20 minutes until chicken is cooked through.
- Remove chicken from the pot, shred with two forks, and return to the soup.
- Stir in corn, black beans, and lime juice. Simmer 5 more minutes until heated through.
- Serve hot, topped with tortilla strips, shredded cheese, cilantro, sour cream, and avocado if desired.
Notes
For extra spice, add diced jalapeños or a pinch of cayenne. Leftovers taste even better the next day as the flavors meld.
