- 1 lb boneless, skinless chicken breast, diced
- 1 cup orzo pasta
- 1 tbsp olive oil
- 2 tbsp butter
- 1 small onion, diced
- 2 cloves garlic, minced
- 2 carrots, diced
- 1 cup frozen peas
- 3 cups chicken broth
- 1/2 cup heavy cream or milk
- 1 tsp dried thyme
- 1/2 tsp salt
- 1/4 tsp black pepper

- Add diced chicken and cook until lightly browned. Remove and set aside.
- Add onion, garlic, and carrots to the skillet. Sauté 3–4 minutes until softened.
- Stir in orzo, chicken broth, thyme, salt, and pepper. Bring to a boil.
- Reduce heat and simmer 10–12 minutes, stirring occasionally, until orzo is tender.
- Return chicken to the pot and stir in peas and cream.
- Cook 2–3 more minutes until everything is heated through and creamy.
- Serve warm and enjoy this comforting pot pie–style meal.
Notes
For extra richness, add a sprinkle of Parmesan cheese before serving. Leftovers thicken as they sit—add a splash of broth when reheating.
