- 2 1/2 lbs beef chuck, cut into cubes
- 2 tbsp olive oil
- 4 slices bacon, chopped
- 1 large onion, diced
- 3 carrots, sliced
- 4 cloves garlic, minced
- 2 tbsp tomato paste
- 2 tbsp flour
- 2 cups red wine
- 2 cups beef broth
- 1 tsp thyme
- 2 bay leaves
- 1 lb mushrooms, halved
- Salt and pepper to taste

- Brown bacon: In a large Dutch oven, cook bacon until crispy. Remove and set aside.
- Sear beef: Season beef with salt and pepper. Brown in batches in bacon fat and olive oil. Set aside.
- Sauté vegetables: Add onion and carrots; cook until softened. Add garlic and tomato paste and cook 1 minute.
- Thicken: Stir in flour and cook briefly.
- Deglaze: Pour in red wine, scraping up browned bits.
- Simmer: Add beef, broth, thyme, bay leaves, and bacon. Cover and simmer 2.5–3 hours on low heat until tender.
- Add mushrooms: Sauté mushrooms separately and add during the last 30 minutes.
- Finish: Adjust seasoning and remove bay leaves before serving.
Notes
This dish tastes even better the next day. Use a good-quality dry red wine for the best flavor. Serve with mashed potatoes or crusty bread.
