Description
Creamy, tangy, and packed with flavor, this Classic American Potato Salad is the ultimate side dish for backyard barbecues, summer cookouts, and holiday picnics. Made with tender potatoes, crunchy veggies, and a flavorful dressing, it’s a nostalgic favorite that never goes out of style.
Ingredients
Scale
- 2 lbs Yukon Gold or red potatoes, peeled and cut into chunks
- 1 cup mayonnaise
- 2 tablespoons yellow mustard
- 2 tablespoons apple cider vinegar
- 1 teaspoon sugar
- Salt and black pepper to taste
- 1/2 cup celery, finely chopped
- 1/2 cup red onion, finely chopped
- 3 hard-boiled eggs, chopped
- 2 tablespoons chopped fresh parsley (optional)
Instructions
- Cook the Potatoes: Place potatoes in a large pot and cover with cold salted water. Bring to a boil, then reduce to a simmer and cook until fork-tender, about 10–12 minutes. Drain and let cool.
- Make the Dressing: In a large mixing bowl, whisk together mayonnaise, mustard, apple cider vinegar, sugar, salt, and pepper until smooth.
- Assemble the Salad: Add cooled potatoes, chopped celery, red onion, and eggs to the bowl with the dressing. Gently stir to combine without mashing the potatoes.
- Chill: Cover and refrigerate for at least 1 hour before serving to let the flavors meld.
- Serve: Garnish with parsley if desired. Serve chilled as a classic side dish.
Notes
For a flavor boost, stir in a spoonful of sweet pickle relish. This salad can be made up to a day in advance—just give it a stir before serving. Yukon Gold potatoes hold their shape well and offer a buttery flavor perfect for this recipe.
