- Prepare the oven: Preheat oven to 350°F (175°C). Grease and line a 9×5-inch loaf pan.
- Mix dry ingredients: In a bowl, whisk together flour, baking soda, baking powder, salt, and cinnamon.
- Cream butter and sugar: In another bowl, beat butter and brown sugar until light and fluffy.
- Add eggs one at a time, mixing well after each addition. Stir in vanilla extract.
- Mix in sour cream (and milk if using) until smooth.
- Combine: Gradually add dry ingredients into wet mixture and stir until just combined.
- Fold in chopped rhubarb gently.
- Assemble: Pour batter into prepared loaf pan and smooth the top.
- Mix cinnamon and sugar and sprinkle over the top if desired.
- Bake: Bake for 50–60 minutes or until a toothpick inserted in the center comes out clean.
- Cool in pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
Notes
For extra flavor, add chopped walnuts or a pinch of nutmeg. This bread stays moist for days and tastes even better the next day.
