  • 2 tbsp olive oil
  • Juice of 2 limes
  • 1 tsp lime zest
  • 3 cloves garlic, minced
  • 1 tsp ground cumin
  • 1/2 tsp chili powder
  • Salt and black pepper to taste
  • 2 cups cooked rice (white or brown)
  • 1 cup black beans, drained and rinsed
  • 1 cup corn kernels
  • 1 avocado, sliced
  • 1/4 cup fresh cilantro, chopped
  • Optional toppings: cherry tomatoes, shredded cheese, sour cream, salsa

  2. Place steak in a shallow dish or zip-top bag and pour marinade over it. Marinate for at least 30 minutes (or up to 4 hours in the refrigerator).
  3. Heat a grill pan or skillet over medium-high heat. Cook steak 4–5 minutes per side (depending on thickness) until desired doneness.
  4. Let steak rest for 5 minutes, then slice thinly against the grain.
  5. Assemble bowls: divide rice among bowls, top with black beans, corn, sliced steak, and avocado.
  6. Sprinkle with fresh cilantro and add optional toppings as desired. Serve with extra lime wedges.

Notes

Swap steak for grilled chicken or shrimp if preferred. For extra flavor, drizzle with a simple cilantro lime sauce made from Greek yogurt, lime juice, and chopped cilantro. Great for meal prep—store components separately for best freshness.
