- 2 tbsp olive oil
- Juice of 2 limes
- 1 tsp lime zest
- 3 cloves garlic, minced
- 1 tsp ground cumin
- 1/2 tsp chili powder
- Salt and black pepper to taste
- 2 cups cooked rice (white or brown)

Instructions
Instructions
- In a bowl, whisk together olive oil, lime juice, lime zest, garlic, cumin, chili powder, salt, and pepper.
- Place steak in a shallow dish or zip-top bag and pour marinade over it. Marinate for at least 30 minutes (or up to 4 hours in the refrigerator).
- Heat a grill pan or skillet over medium-high heat. Cook steak 4–5 minutes per side (depending on thickness) until desired doneness.
- Let steak rest for 5 minutes, then slice thinly against the grain.
- Assemble bowls: divide rice among bowls, top with black beans, corn, sliced steak, and avocado.
- Sprinkle with fresh cilantro and add optional toppings as desired. Serve with extra lime wedges.
Notes
Swap steak for grilled chicken or shrimp if preferred. For extra flavor, drizzle with a simple cilantro lime sauce made from Greek yogurt, lime juice, and chopped cilantro. Great for meal prep—store components separately for best freshness.
