- 1/4 cup pumpkin puree
- 1/4 cup molasses
- 2 tsp vanilla extract

- In a medium bowl, whisk together flour, baking soda, salt, cinnamon, ginger, cloves, and nutmeg.
- In a large bowl, beat butter, granulated sugar, and brown sugar until creamy.
- Add egg, pumpkin puree, molasses, and vanilla extract; mix until smooth.
- Gradually add dry ingredients, mixing until just combined.
- Roll dough into 1-inch balls and optionally roll in granulated sugar.
- Place on prepared baking sheets about 2 inches apart.
- Bake for 10–12 minutes until edges are set but centers remain soft.
- Cool on the baking sheet for 5 minutes before transferring to a wire rack.
Notes
For extra flavor, add a pinch of ground cardamom or a handful of chopped nuts. Store in an airtight container for up to 5 days.
