- 1/2 cup brown sugar, packed
- 1/4 cup granulated sugar
- 1/2 cup pure maple syrup
- 1 large egg
- 1 tsp vanilla extract
- 2 tbsp coarse sugar for rolling (optional)

- In a medium bowl, whisk together flour, baking soda, salt, and cinnamon.
- In a large bowl, beat butter, brown sugar, and granulated sugar until creamy.
- Add egg, vanilla extract, and maple syrup; mix until smooth.
- Gradually add dry ingredients and mix until just combined.
- Roll dough into 1–1.5 inch balls and optionally roll in coarse sugar.
- Place on the prepared baking sheet about 2 inches apart.
- Bake for 10–12 minutes until edges are set but centers remain soft.
- Cool on the baking sheet for 5 minutes before transferring to a wire rack.
Notes
For extra maple flavor, drizzle a little maple glaze on top once cooled. Store in an airtight container for up to 5 days.
