- 6 medium russet potatoes, peeled and diced
- 1 medium onion, chopped
- 4 cloves garlic, minced
- 4 cups chicken or vegetable broth
- 2 cups whole milk
- 1 cup heavy cream
- 2 cups sharp cheddar cheese, shredded
- 2 tablespoons butter
- 2 tablespoons olive oil
- 3 tablespoons all-purpose flour
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1 teaspoon dried parsley
- Salt and black pepper, to taste
- Fresh parsley or chives, chopped (for garnish)
Instructions
- Heat butter and olive oil in a large pot over medium heat. Add onion and garlic, cooking until fragrant and soft.
- Stir in flour to form a roux, whisking for 1–2 minutes.
- Slowly pour in broth and milk, whisking until smooth and slightly thickened.
- Add diced potatoes, thyme, rosemary, and parsley. Simmer until potatoes are tender, about 15–20 minutes.
- Stir in heavy cream and shredded cheddar cheese. Cook until cheese melts and soup is creamy.
- Season with salt and black pepper to taste. Garnish with fresh herbs and serve hot.
Notes
For extra flavor, roast the garlic cloves before adding them. You can also blend half of the soup for a smoother texture while keeping some potato chunks.
