- 1 cup unsalted butter, softened
- 2/3 cup granulated sugar
- 1 large egg
- 1 tsp vanilla extract
- 2 cups all-purpose flour
- 1/2 tsp salt
- 2 tbsp dried chamomile flowers, finely crushed
- Optional: powdered sugar for dusting

- Preheat oven: Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Cream butter & sugar: In a large bowl, beat butter and sugar until light and fluffy. Add egg and vanilla extract and mix until combined.
- Mix dry ingredients: In a separate bowl, whisk flour, salt, and crushed chamomile flowers. Gradually add to the butter mixture until a soft dough forms.
- Shape cookies: Scoop tablespoon-sized portions of dough and roll into balls. Place on the prepared baking sheet about 2 inches apart.
- Flatten slightly with the palm of your hand or the bottom of a glass.
- Bake: Bake for 12–15 minutes until edges are lightly golden. Cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
- Optional: dust with powdered sugar before serving.
Notes
Use culinary-grade chamomile flowers for best flavor. For a stronger floral note, steep chamomile in 1 tbsp warm milk and add to the dough. Store cookies in an airtight container for up to 5 days.
