- 1/2 cup cream cheese frosting
- 1/2 tsp ground cinnamon (optional)
- 1/4 tsp nutmeg (optional)
- 12 oz white chocolate, melted
- 1/4 cup finely chopped pecans (optional)
- Sprinkles or shredded coconut for garnish (optional)

- In a large bowl, combine crumbled carrot cake and cream cheese frosting until fully blended. Stir in cinnamon and nutmeg if using.
- Roll mixture into 1-inch balls and place on a parchment-lined baking sheet.
- Chill in the refrigerator for 30–45 minutes until firm.
- Melt white chocolate in a microwave-safe bowl in 30-second intervals, stirring between each until smooth.
- Dip each chilled truffle into melted chocolate, coating completely. Let excess drip off.
- Place back on parchment paper and immediately garnish if desired.
- Allow chocolate to set completely at room temperature or refrigerate until firm.
Notes
Keep truffles chilled before dipping to prevent soft centers. Store in an airtight container in the refrigerator for up to 5 days. You can substitute milk or dark chocolate for a richer flavor.
