- 12 oz white chocolate or candy melts

- In a large bowl, combine crumbled carrot cake and cream cheese frosting. Mix until fully blended.
- Stir in cinnamon and chopped pecans if using.
- Roll mixture into 1-inch balls and place on a parchment-lined baking sheet.
- Refrigerate for at least 30 minutes until firm.
- Melt white chocolate according to package instructions.
- Dip each chilled truffle into melted chocolate, coating completely.
- Place back on parchment paper and decorate with sprinkles or chopped pecans.
- Chill until chocolate is set, about 15–20 minutes.
Notes
Store truffles in an airtight container in the refrigerator for up to 5 days. You can use homemade or store-bought carrot cake for this recipe.
