  • 1/2 cup cream cheese frosting
  • 12 oz white chocolate or candy melts
  • 1/2 tsp ground cinnamon (optional)
  • 1/4 cup finely chopped pecans (optional)
  • Sprinkles or extra pecans for garnish

  1. In a large bowl, combine crumbled carrot cake and cream cheese frosting. Mix until fully blended.
  2. Stir in cinnamon and chopped pecans if using.
  3. Roll mixture into 1-inch balls and place on a parchment-lined baking sheet.
  4. Refrigerate for at least 30 minutes until firm.
  5. Melt white chocolate according to package instructions.
  6. Dip each chilled truffle into melted chocolate, coating completely.
  7. Place back on parchment paper and decorate with sprinkles or chopped pecans.
  8. Chill until chocolate is set, about 15–20 minutes.

Notes

Store truffles in an airtight container in the refrigerator for up to 5 days. You can use homemade or store-bought carrot cake for this recipe.
