- 1 1/2 cups graham cracker crumbs
- 1/4 cup granulated sugar
- 1/2 cup unsalted butter, melted
- 16 oz cream cheese, softened
- 1/2 cup granulated sugar (for cheesecake layer)
- 2 large eggs
- 1 tsp vanilla extract
- 2 medium apples, peeled, cored, and diced
- 1/4 cup brown sugar
- 1/2 tsp cinnamon
- 1/4 cup caramel sauce, plus extra for drizzling
Instructions
- Preheat oven to 350Β°F (175Β°C) and line an 8×8-inch baking pan with parchment paper.
- Mix graham cracker crumbs, 1/4 cup sugar, and melted butter; press into the bottom of the pan to form crust.
- In a bowl, beat cream cheese, 1/2 cup sugar, eggs, and vanilla until smooth. Pour over crust.
- Toss diced apples with brown sugar and cinnamon, then layer on top of the cheesecake mixture.
- Drizzle 1/4 cup caramel sauce over the apples.
- Bake for 35β40 minutes, until the center is set and edges are lightly golden.
- Cool completely, then refrigerate for at least 2 hours before slicing into bars. Drizzle with extra caramel before serving.
