Ingredients

  • 1 medium head cabbage, chopped
  • 1 large onion, diced
  • 3 carrots, sliced
  • 2 celery stalks, chopped
  • 1 green bell pepper, chopped
  • 1 can (14.5 oz) diced tomatoes
  • 6 cups vegetable broth or water
  • 2 garlic cloves, minced
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1/2 tsp red pepper flakes (optional)
  • Salt and black pepper, to taste
  • 1 tbsp olive oil

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onions and garlic, and sauté for 2–3 minutes until fragrant.
  2. Add carrots, celery, bell pepper, and cabbage. Cook for about 5 minutes, stirring occasionally.
  3. Pour in diced tomatoes and vegetable broth. Season with oregano, basil, red pepper flakes, salt, and pepper.
  4. Bring to a boil, then reduce the heat and let it simmer for 25–30 minutes until the vegetables are tender.
  5. Serve hot and enjoy this light, fat-burning meal.

Notes

This soup is best enjoyed fresh, but it also stores well in the fridge for 3–4 days. For variety, add zucchini or green beans.
