- 1 medium head cabbage, chopped
- 1 large onion, diced
- 3 carrots, sliced
- 2 celery stalks, chopped
- 1 green bell pepper, chopped
- 1 can (14.5 oz) diced tomatoes
- 6 cups vegetable broth or water
- 2 garlic cloves, minced
- 1 tsp dried oregano
- 1 tsp dried basil
- 1/2 tsp red pepper flakes (optional)
- Salt and black pepper, to taste
- 1 tbsp olive oil
Instructions
- Heat olive oil in a large pot over medium heat. Add onions and garlic, and sauté for 2–3 minutes until fragrant.
- Add carrots, celery, bell pepper, and cabbage. Cook for about 5 minutes, stirring occasionally.
- Pour in diced tomatoes and vegetable broth. Season with oregano, basil, red pepper flakes, salt, and pepper.
- Bring to a boil, then reduce the heat and let it simmer for 25–30 minutes until the vegetables are tender.
- Serve hot and enjoy this light, fat-burning meal.
Notes
This soup is best enjoyed fresh, but it also stores well in the fridge for 3–4 days. For variety, add zucchini or green beans.
