- 1 cup cream cheese, softened
- 1/2 cup ricotta cheese

- In a separate bowl, mix cream cheese, ricotta, Parmesan, and olive oil until smooth and creamy.
- Spread the creamy mixture evenly onto a serving dish.
- Spoon the tomato mixture over the top, including some of the juices.
- Drizzle with a little extra olive oil or balsamic glaze if desired.
- Serve immediately with toasted baguette slices or crackers.
Notes
For best texture, drain excess tomato juice before topping if making ahead. This dip is best served fresh but can be assembled up to 2 hours in advance and refrigerated. Bring to room temperature before serving.
