  2. Mix dry ingredients: In a bowl, whisk together flour, baking soda, baking powder, salt, and cinnamon.
  3. Cream butter and sugar: In a separate bowl, beat butter and brown sugar until light and fluffy.
  4. Add egg and vanilla extract, mixing until fully combined.
  5. Gradually mix the dry ingredients into the wet ingredients until a soft dough forms.
  6. Fold in chopped rhubarb and white chocolate chips if using.
  7. Shape the cookies: Scoop spoonfuls of dough onto prepared baking sheets, spacing slightly apart.
  8. Bake: Bake for 12–14 minutes or until edges are lightly golden.
  9. Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack.
  10. Optional glaze: Stir powdered sugar, brown sugar, milk, and vanilla together and drizzle over cooled cookies.

Notes
