Ingredients

  • 8 large eggs
  • 1/4 cup milk
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 6 slices bacon or sausage, cooked and crumbled
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup diced bell peppers
  • 1/4 cup diced onions
  • 1 tbsp olive oil or butter
  • Optional toppings: salsa, avocado, hot sauce

Instructions

  1. In a skillet, cook bacon or sausage until crispy. Remove and set aside.
  2. In the same skillet, sautΓ© onions and bell peppers in a bit of oil until soft.
  3. In a bowl, whisk together eggs, milk, salt, and pepper. Pour into the skillet and cook, stirring gently, until softly scrambled.
  4. Stir in cooked bacon and shredded cheese.
  5. Warm tortillas slightly, then spoon the egg mixture into the center of each.
  6. Fold the sides and roll up tightly to form burritos.
