Ingredients

- 6 large flour tortillas
- 8 large eggs
- 1/4 cup milk
- 1/2 tsp salt
- 1/4 tsp black pepper
- 6 slices bacon or sausage, cooked and crumbled
- 1/2 cup shredded cheddar cheese
- 1/2 cup diced bell peppers
- 1/4 cup diced onions
- 1 tbsp olive oil or butter
- Optional toppings: salsa, avocado, hot sauce
Instructions
- In a skillet, cook bacon or sausage until crispy. Remove and set aside.
- In the same skillet, sautΓ© onions and bell peppers in a bit of oil until soft.
- In a bowl, whisk together eggs, milk, salt, and pepper. Pour into the skillet and cook, stirring gently, until softly scrambled.
- Stir in cooked bacon and shredded cheese.
- Warm tortillas slightly, then spoon the egg mixture into the center of each.
- Fold the sides and roll up tightly to form burritos.
- Optional: toast burritos in a dry skillet for 1β2 minutes per side for a crispy finish.
- Serve immediately or wrap and freeze for later.
