- 2 tbsp olive oil
- 2 cloves garlic, minced
- 1 cup fresh blueberries
- 1/2 cup chicken broth
- 2 tbsp balsamic vinegar
- 1 tbsp honey
- 1 tsp fresh thyme leaves (or 1/2 tsp dried thyme)
- 1 tbsp butter (optional, for richness)
- Fresh thyme sprigs for garnish (optional)

- Heat olive oil in a large skillet over medium heat. Sear chicken 5–6 minutes per side until golden and cooked through. Remove and set aside.
- In the same skillet, sauté garlic for 30 seconds until fragrant.
- Add blueberries, chicken broth, balsamic vinegar, honey, and thyme. Simmer 5–7 minutes, gently pressing some blueberries to release juices.
- Stir in butter if using for a silky finish.
- Return chicken to the skillet and spoon sauce over the top. Simmer 2–3 minutes to coat and heat through.
- Garnish with fresh thyme and serve warm.
Notes
Delicious served over rice, mashed potatoes, or quinoa. For extra depth, add a splash of white wine when sautéing garlic. This recipe also works beautifully with chicken thighs.
