- 3/4 cup granulated sugar
- 1 large egg
- 1 tsp vanilla extract

- 3/4 cup fresh or frozen blueberries (do not thaw if frozen)

- Preheat oven: Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Cream butter & sugar: Beat butter and sugar until light and fluffy. Add egg, vanilla extract, and lemon zest, mixing until combined.
- Mix dry ingredients: Whisk together flour, baking soda, and salt. Gradually add to the wet mixture and mix until just combined.
- Gently fold in blueberries to avoid breaking them.
- Shape cookies: Drop tablespoon-sized portions onto prepared baking sheet, spacing about 2 inches apart.
- Bake: Bake 12–15 minutes until edges are lightly golden. Cool on baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
Notes
For a stronger lemon flavor, add 1 tsp lemon extract. Cookies are best served the same day, but can be stored in an airtight container for up to 3 days.
