  • 1 cup whole milk
  • 2 Earl Grey tea bags
  • 1 1/2 cups all-purpose flour
  • 1 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract

For the Blackberry Buttercream:

  • 1/2 cup blackberry puree (strained)
  • 1 cup unsalted butter, softened
  • 34 cups powdered sugar
  • 1 tsp vanilla extract

  1. Heat milk until warm and steep Earl Grey tea bags for 10 minutes. Cool completely.
  2. Preheat oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  3. Whisk flour, baking powder, and salt together.
  4. Cream butter and sugar until light and fluffy. Add eggs one at a time, then vanilla.
  5. Alternate adding dry ingredients and cooled tea-infused milk until combined.
  6. Fill liners 2/3 full and bake for 18–22 minutes. Cool completely.
  7. For frosting, beat butter until smooth. Gradually add powdered sugar.
  8. Mix in blackberry puree and vanilla. Beat until fluffy.
  9. Pipe or spread frosting onto cooled cupcakes and garnish with fresh blackberries if desired.

Notes

Strain blackberry puree to remove seeds for a smooth buttercream. For a stronger tea flavor, steep an extra tea bag. Store cupcakes refrigerated and bring to room temperature before serving.
