- 1/2 cup erythritol or preferred keto sweetener
- 1 tsp baking powder
- 1/4 tsp salt
- 3 large eggs
- 1/4 cup melted coconut oil or butter
- 1 tsp vanilla extract
- 1/2 cup unsweetened almond milk
- 1 cup sugar-free frosting
- Black food coloring or cocoa powder for decoration
- Optional: sugar-free chocolate chips or edible eyes for cat features
Instructions
- Preheat oven to 350°F (175°C) and line a muffin tin with cupcake liners.
- In a mixing bowl, whisk together almond flour, cocoa powder, erythritol, baking powder, and salt.
- In another bowl, beat eggs, melted coconut oil, vanilla extract, and almond milk.
- Combine wet and dry ingredients and mix until smooth.
- Fill cupcake liners about 2/3 full and bake for 18–22 minutes, or until a toothpick comes out clean.
- Allow cupcakes to cool completely before frosting.
- Frost with sugar-free frosting and decorate with black food coloring, chocolate chips, or edible eyes to create black cat faces.
- Serve immediately or store in the refrigerator until ready to enjoy.
