- 1 lb fresh green beans, trimmed and blanched
- 2 tbsp butter
- 1 small onion, finely chopped
- 8 oz mushrooms, sliced
- 2 cloves garlic, minced
- 1/4 cup all-purpose flour
- 1 1/2 cups chicken or vegetable broth
- 1/2 cup heavy cream
- 1 tsp soy sauce
- Salt and black pepper, to taste
- 1 1/2 cups fried onions (store-bought or homemade)
Instructions
- Preheat oven to 350°F (175°C).
- Blanch green beans in boiling water for 3–4 minutes, then drain and set aside.
- In a skillet, melt butter over medium heat. Sauté onion and mushrooms until tender, about 5–7 minutes. Add garlic and cook 1 more minute.
- Sprinkle flour over the mushroom mixture and stir for 1–2 minutes.
- Slowly add broth and cream, stirring constantly until sauce thickens.
- Add soy sauce, salt, and pepper to taste. Mix in blanched green beans.
- Transfer mixture to a greased baking dish and top with fried onions.
- Bake for 20–25 minutes until bubbly and golden on top.
- Serve hot as a classic Southern side dish.

Use fresh green beans for the best flavor. Make sauce ahead to save time; top with onions just before baking for extra crispiness.
