  • 1/2 tsp garlic powder
  • 6 slices bacon, cooked and crumbled
  • 1/4 cup green onions, sliced
  • 2 tbsp fresh parsley, chopped
  • Optional: 1/2 tsp smoked paprika

  1. Roast potatoes: Preheat oven to 425°F (220°C). Toss potatoes with olive oil, salt, and pepper. Spread on a baking sheet.
  2. Roast for 30–35 minutes, flipping halfway, until golden and crispy.
  3. Make dressing: In a bowl, whisk together mayonnaise, Greek yogurt, Dijon mustard, apple cider vinegar, garlic powder, and smoked paprika.
  4. Combine: Let roasted potatoes cool slightly, then add to a large bowl.
  5. Mix in bacon, green onions, and parsley.
  6. Pour dressing over potatoes and toss gently until well coated.
  7. Serve: Enjoy warm, room temperature, or chilled.

Notes

For extra crispiness, roast potatoes on a preheated baking sheet. You can also swap bacon for turkey bacon or leave it out for a vegetarian version.
