- 1/2 tsp garlic powder
- 6 slices bacon, cooked and crumbled
- 1/4 cup green onions, sliced
- 2 tbsp fresh parsley, chopped
- Optional: 1/2 tsp smoked paprika

- Roast potatoes: Preheat oven to 425°F (220°C). Toss potatoes with olive oil, salt, and pepper. Spread on a baking sheet.
- Roast for 30–35 minutes, flipping halfway, until golden and crispy.
- Make dressing: In a bowl, whisk together mayonnaise, Greek yogurt, Dijon mustard, apple cider vinegar, garlic powder, and smoked paprika.
- Combine: Let roasted potatoes cool slightly, then add to a large bowl.
- Mix in bacon, green onions, and parsley.
- Pour dressing over potatoes and toss gently until well coated.
- Serve: Enjoy warm, room temperature, or chilled.
Notes
For extra crispiness, roast potatoes on a preheated baking sheet. You can also swap bacon for turkey bacon or leave it out for a vegetarian version.
