Ingredients

Scale

Ingredients

  • 2 pounds boneless, skinless chicken thighs or chicken breasts
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1 cup barbecue sauce
  • 1/2 cup pineapple juice
  • 2 tablespoons brown sugar
  • 1 tablespoon soy sauce
  • 1 teaspoon minced garlic
  • 4 pineapple rings
  • 2 green onions, sliced
  • Fresh cilantro, for garnish (optional)

Instructions

Instructions

  1. Season the chicken: Pat chicken dry and rub with olive oil, garlic powder, paprika, salt, and pepper.
  2. Prepare the sauce: In a bowl, whisk together barbecue sauce, pineapple juice, brown sugar, soy sauce, and minced garlic.
  3. Preheat grill: Heat grill to medium-high heat and lightly oil the grates.
  4. Grill chicken: Cook chicken for 5–7 minutes per side, brushing generously with the Hawaiian BBQ sauce throughout cooking.
  5. Grill pineapple: Place pineapple rings on the grill during the last 3–4 minutes and cook until lightly caramelized.
  6. Finish cooking: Continue grilling until chicken reaches an internal temperature of 165°F (74°C).
  7. Rest: Remove chicken from grill and let rest for 5 minutes.
  8. Serve: Top with grilled pineapple rings, drizzle with extra sauce, and garnish with green onions and cilantro.

Notes

For extra tropical flavor, marinate the chicken in half of the sauce for 1–2 hours before grilling. This recipe pairs wonderfully with coconut rice, grilled vegetables, or Hawaiian macaroni salad.
